Entremets, a classic French dessert with layers of mousse, cremeux, cake, and a crunch component. Equally adored for their beauty as much as their taste. Each entremet is garnished with its own distinct handmade décor ranging from mini macarons to chocolate garnishes to sugar work. Each bite is marbled with textural contrasts that explode with flavor when the rich mousse collapses into the crunchy base and sweet notes of the glaze. Entremets are an elegant and refined dessert for any special occasion, but especially for those that command a statement of visual artistry. Entremets are slowly gaining ground as a luxurious and decadent alternative to the classic celebration cake. A Petit Gateaux is simply just a smaller version of our luxury signature Entremets!

Five Spice Daquoise, Roasted Port Pears, Caramel Mousse, Burnt Honey Greek Yogurt Bavarian, Salted Caramel Glaze, Caramelized White Chocolate, Cocoa Nib Caramel Nougatine and Crystalized Chocolate Wood Garnishes

Layers of Dark Chocolate sponge, Strawberry Mousse, Strawberry Marmalade and Moscato infused strawberries. Enrobed in a Dark Chocolate Glaze flecked with real 24k gold and garnished with fanned strawberries.

Chocolate liquid shortening cake, dark chocolate mousse, rum simple syrup, chocolate glaze. Marble chocolate plaques, White modeling chocolate flower, white chocolate wisps and transfer sheet garnishes.

Vanilla Bean Mousse, Cherry Cremeux, Cherry Candy Glaze or Sprayed Chocolate, Shortbread and Chocolate Garnish.
